New extreme rig GPU choice and more

Hi guys,
I'm about to have enough money to build an enthusiast Rig but I got some questions since I am not an hardware expert. Here is the build:
CPU: I7 5960x
MB: Asus Rampage V Extreme
Case: Corsair 900D
GPU: 3 Way SLI GTX 780 or a GTX980 or a GTX980TI
HDD:3x500GB Seagate HDD + 1X 4TB seagate
SSD: 2xSamsung EVO 1tb
PSU: EVGA 220-p2-1600 1600W
RAM:2x G.SKILL Ripjaws 4 Series 32GB (4 x 8GB) 3000mhz

1. Which one is better 3 way SLI EVGA GTX 780 3GB ACX cooler (I already have one) + 2 refurbished for 380$ each or 1x980 or 1X980TI (to go 2 way sli next year) Which option is the most worthy. (I do not plan to game on 3 monitors)

2.For now I have 3 VM running on the same HDD which cause me some HDD usage and lag issues. If they have their own hard drive I guess the issue will be resolved? (They run on VMware workstation 11)

3. I want to watercool this beast with a custom loop I feel ready to build it but choosing fittings and parts is so hard. I want to use the compression fittings with soft tubing and quickrelease fittings (will those leave some liquid when I disconnect them) ? I understand the tubing part which fit with the fittings like 11/8 but what abount the thread? is it always G1/4?

4. Light and led. I was wondering if it was possible to light the tubing and how? I would like my rig to be red may be also have a reservoir that have led in it. I would also like to know if a modex switch exist to turn the lights off when I go to sleep. Like I plug my modex switch first and then all the light adapters so I could cut the power off when I want... (is it clear enough?)

5.Will be 1600W enough for all this?

You don't need triple GPUs, unless you've got like a 4-5 Monitor setup you don't need it. Same with double GPUs, It's all just a waste of money in the first place because you'll have the same experience with both of them and without, there's no major difference.

Though if you're talking about an extreme rig, I suggest a 980 so In the end 1600 watts would be a bit overkill.

What worries me about the power is the water cooling and case lightning I wan't to install in it... Where could I post my question about water cooling (since nobody here seem's to know a lot about it)

I dont think you would be able to Light your water tubes from the inside without some protective casing around it which is hard to find cheap nowadays, though I do believe you can light it up from the outside.

a gtx 980 is pointless and if you going with 780 for that just get the 970.... go for the 980ti, One 980ti is more than enough for any game at 4k 60+fps, 2 will just be overkill but if you can do it then go for it.
you can find a reservoir with a light in it. but not for the tubing. best bet would be to place some LEDs smartly so it looks like the water is lit up.
1600w is more than enough

for water cooling theres a guy on youtube "jayztwocents" check him out, he has a lot of videos on custom water cooling. you can learn a bit more on parts there.
