Adding an SSD to a single HDD system

Haha, I know there are a bunch of threads on this topic... but the ones I found were pretty chaotic and kind of old at that.So, I was hoping for some personalized information... or at least a guide that includes my specific interests.

I will soon be buying an SSD to add to my 1TB HDD system. I have 900GB of games on the HDD, but the only thing I really care about there is the save files and I know how to save and back those up (I have a USB I can use for that). The main reason I want the SSD is of course for the boot times. However, I also want to put a few games on there at a time (I'm getting a 256GB).

I was hoping that I could put steam/origin on the SSD as well as my OS and antivirus (AVG free version) and just be able to choose where the games I download go, but I have no idea if that is possible.
Like for example, if I put GTA on the SSD and put all other games on the HDD, can I run and play those games from booting steam off of the SSD?

I saw another thread that said I can leave my HDD as is, and simply reinstall my OS onto the new SSD so that incase my SSD ever fails I can simply boot from HDD. Will this work as well?

The ideal situation for me would be to keep my HDD as is, and reinstall my OS on the SSD and simply download the select games I want on the SSD. But how will this work with steam/origin communicating with the HDD? I have zero experience with multiple drives... please help!

Just got home from actually buying the SSD!
It's a PNY CS1100 Series.
240GB

I'm excited to get this rolling! But the guy at microcenter said their is no way to keep my HDD as is... so that's a bummer if true.
