Should I buy the new Intel Skylake CPUs? (Haven't bought any of my parts yet)

I have not bought any of my parts except for my case.

I am wondering If I should purchase the new Skylake processors and Z170 Motherboards
If so I am planning to go for the i7-6700k because of hyperthreading and advantage in video editing over the i5. I game a lot too.

Also if I should get Skylake, what is the best DDR3 or DDR4 RAM for it?

No reason not to get it, aside from the slightly high release prices.

I would stick with the Qualified Vendor List (an ASUS term) when buying a brand new motherboard type on release. In general no one will know but the manufacturers what RAM is good to use for at least a few weeks/months. Generally though, as long as you pick memory that matches the profiles found in the QVL it should work.
 
A Xeon1231v3 would be a better option than an i5 -K or i7 -K and it is cheap-ish. LGA1155/6 systems still run the latest GPUs and their CPUs are good enough. If editing and rendering are your your 'golden goose', then I'd go with Skylake for the reasons you give. The motherboard is a bit of a crapshoot, the verdict on them is not in yet.

Otherwise I'd go with an LGA 1150 system. If you really need to work, a Broadwell 6 core system might be best.

Broadwell 6-core? Do you mean Haswell-E?
