Why does Skylake not support Triple/quad channel RAM?

I'm just wondering why the latest generation of intel CPU's only supports Dual Channel memory, wouldn't Triple/Quad offer better performance capabilities?

Cost and target audience. Many customers don't want the cost of matched quad memory kits. By cutting back the controller to dual channel the cost is reduced for Intel and for the end user. If you want quad memory, then you will probably get a Xeon rather than an i7.

Theoretical differences in memory bandwidth can be large and can be benchmarked as such, but real world performance differences are usually small.
