What is your current PSU?
Well, your system can fit 2 graphic cards there, so personally I'm going to recommend you a single powerful graphic card, not forget to mention your monitor resolution is just 1680x1050 which is not too demanding.

A single card gives you less heat, less power consumption, less issue with crossfire or driver, less heat, and also less noise. :)

What's your budget? But a single R7 is around $120-150 for the better end ones. For all the prince ranges, the best cards are:
For <200 the best you'll get is something on the 960 chipset. The EVGA 02G-P4-2966-KR is probably the best one for around $175
For a more the EVGA 04G-P4-3975-KR on the 970 chipset is a good choice as well for around $320, but for $350 the Gigabyte G1 gaming 970 is better.
If you're going any higher just get a 980 or 980ti depending on how far you can bring out your budget. Nvidia cards are overall better than Radeon IMO. As far as your dual channel graphics question, if you mean using crossfire or SLI, it will boost performance by near double if you have 2 of the same card vs 1, but it consumes A LOT of power, has a huge heat output, and isn't all that reliable.
