scaniatruckfan has the right idea. I added a better motherboard and a more reasonably price but still very good psu.

Do you need a monitor, keyboard and mouse or any other extras?

Changed CPU to i3 4160 because of better upgrade path than FX 6300. Cheaper RAM, much better case and higher quality power supply and bigger hard drive.

Why the expensive PSU? I've never done this before so I just want to know the reasoning behind it.

Because it is much higher quality than the Corsair one you listed. The Corsair is Tier 3 while the EVGA one I listed is Tier 1. It is important to have a high quality power supply and never to cheap out on it because it's the most important part of any build. For gaming builds it's better to have Tier 1 or Tier 2.

You don't need the wired internet adapter,it's on the motherboards back i/o too.

Something else, just for some choice and a bit for the looks too,

good parts too,a bit more expensive as well because of the motherboard and gpu mostly. The gtx 960 is a good gpu as well and supports DX12,the one i chose does not. That would make it less expensive.
The psu is a good choice as well although abit high on the wattage side.
That wifi adapter is my preferred choice. Can be annoying when in sight (green led) but can also be moved so that could make a difference in signal strenght. This would be another good choicer afaik,
