I'm putting together a new system build, based on the aforementioned mobo. I'm prepared to use a standard SATA 2.5" SSD for the boot disk, but I'd prefer to use an M.2 SSD instead. Will this mobo support that? Are there and particular types/brands of M.2-SSDs that I should use, or specific ones I should avoid? Any input from your experience/knowledge-base would be appreciated.

Most of the M.2 SSD's on the market have no speed advantage over a regular SSD connected to a SATA 6GB/s port.
Their are some out but very expensive.
I would buy a regular Samsung 850 EVO and use that unless your just running benchmarks you will never see any real world difference.

Thanks for your speedy reply! I hadn't realized that the PCIe versions of the M.2's (faster than SATA versions) were also TRIPLE the price.

So if I'm back to a standard SATA SSD for a boot drive (my primary issue being SSD=boot drive), is your recommended Samsung 850 EVO proven to work OK for that purpose on the Z170 board? The reason I ask is because yesterday I was reading about some SSDs that would function fine as a simple storage device, but could not be made to work as a boot drive.
