Parts to Upgrade: Need pretty much everything. I have GPU's already. Must be SLI compatible.

Your Monitor Resolution: 1920x1080 (is a 65" tv in living room)

Additional Comments: Would like it to be as small as possible for SLI and as quiet as possible. Also PSU must be modular.

I already have all peripherals covered.

Also, I have a Corsair GS600 PSU lying around. Would this be able to power this machine with the two GPU's?

http://pcpartpicker.com/parts/partlist/ The Power supply should be fine. You will also have the option to upgrade to i5 or i7 later if need be. The i3 should be fine in most games. If you want it to be cheaper than could ditch the ssd.
