Is this a good build? what improvements can be made

i have two possible builds.

Build one: http://pcpartpicker.com/p/TZJyP6 I know I can add a better GPU and PSU, but they are left over from an upgraded a pc. id like to use them if i can, it will save some money. The GPU runs the games I play very well, not no 60fps/1080p but good enough to run most games well.

Build two: http://pcpartpicker.com/parts/partlist/ same parts, just a new GPU.

side notes: the PSU and GPU are not under warranty anymore. I'm on a 1800/1900USD (cant go over 2000USD) budget. I dont want AMD products as I want to try Intel. I've used EVGA GPUS on all the pcs that were upgraded. They have worked great I prefer to remain loyal to them. Id also like the RAM to be cosair, as I used them on the same upgraded pc where the GTX 550 Ti and OCZ psu came from (its compatible, but runs at 1333mhz vs 1600mhz) im not sure if it will effect the 1600mhz ram. if I can go faster let me know. id like the mobo to have >4 sata inputs so I can add more if needed as I intend on using this for years.

is 120gb enough for the OS only? or would 250 be better. i might be doing some overclocking. (if it doesnt draw too much power.)
this is also my first build. The upgrades where not done by me, they were done by my father.

any suggestions on what ram? like Cosair Dominator platinum? or corsair vengeance/pro/lp? would those be better performance wise? i know they look better.

thanks for your input. im a little bit of a noob when it comes to overclocking. I want the PC to run fast, but not to the point where im overheating it or breaking things.

that ram was a general idea for me . would something like this be better. im trying to get most of the parts at microcenter or frys. i know its more expensive. but i have a little wiggle room in my budget for it. even if i get the new GPU or PSU.

ok, what about my second question. id like that to be cleared up. someone told me (on a different site) that it wont work if you have too fast of ram such as 1866 in a 1600 (highest speed) compatible possessor.
