how important is IOPS? On the SSD I plan to mainly just put the OS.

And if it is super important which SSD (120 GB MIN, $50 MAX) do you recommend I go with instead?

IOPS is the most important speed in SSD

it is the speed of reading and writing random small files . and all the OS files are small.

the huge numbers 500MB/s this is the speed of sequential read/write of LARGE files ... you will feel them only when copying or reading large files ... like movies , photos , zip files etc ..
