Does setting a custom fan curve void warranty?

I have the Gigabyte Geforce GTX 960 Windforce 4GB and I really hope setting a custom fan curve on MSI afterburner doesn't void my warranty

No.

I recommend setting the fan curve to be like this:

40% at 45°C
50% at 60°C
65% at 70°C
70% at 75°C
80% at 80°C
100% at 85°C

Would you rather let the GPU die, or would you prefer to make the fans work a bit harder to cool it down?

thats not what im saying i have my max temp at 75°C
these are my settings: (idle temps of 25°C)
35% at 20°C
38% at 41°C(I know the rest is a bit random lol)
56% at 62°C
76% at 70°C
100% at 75%

put these into msi afterburner to virtually see the fan curve (you dont have to save it)
