I'm looking to build a new computer for light gaming (CSGO, possibly MC with 164 mods, and some Watch Dogs or AC: Unity.

My current build is as follows, excluding a hard drive, optical drive, ram, and os I already have those components.

CPU: Intel Xeon E3-1231 V3
Cooler: stock is is fine right
MOBO: Gigabyte GA-Z97X-GAMING 7
SSD: 850 EVO 120 OR 250G
GPU: GIGABYTE GTX 970 (GV-N970G1 GAMING-4GD)
PSU: EVGA SUPERNOVA G2 550W OR 650W
CASE:
I like the Thermaltake Core v71 and the overseer rx-i, as well as level 10 gt due to appearance rather than features.

I'm in the US, and had originally picked it for a 4790k, but then didn't know what to change it to afterwards, along with the fact that most of the parts are compatible ootb with hackintosh.

Just for price sake I'd go with this power supply instead

PCPartPicker part list / Price breakdown by merchant

Power Supply: SeaSonic S12II 520W 80+ Bronze Certified ATX Power Supply ($57.99 @ SuperBiiz)

And yeah, you could get by with an H81/B85 mobo instead for much cheaper. Though an H97 board would be most appropriate given the case selections

Motherboard: ASRock H97 PRO4 ATX LGA1150 Motherboard ($83.89 @ OutletPC)

Don't have 4k so there isn't really a good reason for having a build with that. I currently have a 1080p 60hz monitor that is basically brand new.

Anyway this GTX 980 Ti 6GB has both VRAM and POWER to give you 1080p/ULTRA/+60FPS for quite some time w/ AAA games.

So this is the best use you could give for your $1000 if you plan to build the best possible gaming rig (imho).

Also you could spend only $700 and build a great price/performance gaming rig w/ a GTX970.

Its up to you mate :D
