It will still be dual channel. Filling all slots will just add more DIMMs to the two channels. Sometimes that will cause the memory controller to slow down the clock speed. Many AMD boards are known to run two DIMMs at 1600 but four DIMMs at 1333....
 


Ha I remember my first AMD processor with ASUS K8V motherboard had that issue. 2 dims at DDR 400 or 3 at DDR 333...

The CPU was the AMD Athlon64 3000+

Depends on how much DRAM you want - if 8GB or 16GB go with a 2x set of sticks which is less stress on the MC, about the only time you want to 'fill' all slots if you want to max out the DRAM it can take with a full load (generally 32GB on newer 4 slot mobos)
