Overclocking via BIOS help

I bought a 4690K and a MSI Z97 PC Mate board in hopes of reaching 4.4ghz on water. BUT, when in the BIOS, all the necessary things for OCing are not modifiable, ie all voltage, multipliers, but I can enable or disable SpeedStep and TurboBoost. I am a bit new to overclocking, and have overclocked 2 of my graphics cards, and I really do not want to fry this chip!

I'm not sure it is on, but I will check, is it possible to disable it?

That is what I am doing, but none of the settings are adjustable, the BIOS is MSI's click BIOS 4. Adjustable items are denoted as []. And most of the OC options do not have [] around them.
