i know the intel i7 6700k will do better with editing and rendering being that it has 8 threads but

will it be intolerabley slow if i use an i5 6600k or will it be ok. also how will the 6600k do while streaming compared to the 6700k?

No the 6600k will be just fine for those tasks.

It will be fine. Going i7 will not result in a monumental increase in rendering times. But if you're going to be doing it all the time likes its your job the time saved adds up.
