How well will this system perform?

I'm building a computer for the first time. Here are the parts I plan to use:

Do you think this system will let me play modern games like GTA5 on 1080p at 60fps? If it wont, what should I upgrade to make it work for that?

I also play Europa Universalis IV, and that's always chugged on my old computer. Will this new system run EUIV well?

Change motherboard to MSI Z97 Gaming 5, and the PSU to a G2, or GS series. I would go with an MSI or Evga, for your GTX 970, also. A single stick of ram is only acceptable for boards with only two ram slots. Change to a 2x4gb kit, for proper dual channel.
The i7 + gtx-970 will have no problems playing even 2017 games at 1080p and 60fps. If you are not looking to overclock then you are overspending for the k series though, if you are looking to overclock then you need an aftermarket cpu cooler.

The G1 PSU is not great, look for a G2 or GS series one

Get 2x4gb over 1x8 gb on the memory. Memory is designed to work in pairs so 1x8gb is actually 10-15% slower then 2x4gb.

Motherboard is pretty low end for a higher end PC like this. I would look at an Asus Z97 A, or Gigabyte gaming 5
