DDR3 1600Mhz vs 1866Mhz, Which One is Better?

Hi!

I am now in the fine tuning stage of my computer. I bought 2 Corsair CMZ8GX3M1A1600C10B 8GB RAM Sticks which run at 1600Mhz. I saw some people saying 1866Mhz is better but I just wanted to know your opinion. If 1866Mhz is better then how do I overclock my RAM? I don't want to mess anything up or break something.

I have an FX-8370 and a AMD R9 280X. Yesterday while I was tinkering with the settings I noticed that my motherboard (M5A99FX PRO R2.0) was not using the XMP Timings. It was using the JEDEC timings instead so I manually changed the timings and the settings to the XMP profile and now even Memtest86+ says they're running in XMP, so that's a bonus I guess. The timings I set are 10-10-10-27 (I think you can the timings on the Corsair website. So, should I overclock or leave at 1600Mhz with those timings?
