I have a Windows Vista that I plan on using to host a game server, it's got a good processor and 8gb of ram along with a terra of memory. What background processes could I disable to optimize it for running a server.

You can burn Linux to a disc for free http://www.ubuntu.com/desktop. If you choose not to do this since it is a very limited os (even if you install wine) you can just get avg pc tune up for a free trial. It does a pretty good job but you should consider doing a clean install. This would probably be the best choice for running the server.
