Advice On Switching From AMD To Intel (i5 vs i7) & MOBO Choice

Alright all, quick question for you.

I am starting the process of figuring out what processor and mobo I want to get to replace my current setup.

Here is my current config:

CPU - AMD Phenom II quad core (http://www.newegg.com/Product/Product.aspx?Item=N82E16819103674)
RAM - 12GB DDR3
GPU - NVidia GTX 650TI Boost 2GB RAM (http://www.newegg.com/Product/Product.aspx?Item=N82E16814162132)
240GB SSD

I use this for gaming (Total War, Minecraft, Planetside 2, Mount & Blade, etc.), hosting a Plex server (this includes ripping my dvds and adding them to the server), and general computing activities (web browsing, email, etc.).

When I first built the system (back in 2009ish?), I was running an ATI video card but have since switched over to NVidia, man I will never go back.

The AMD has been good overall, except it's loud as crap and the CPU fan goes nuts when in performance mode (Not quite so bad now that I've installed 4 extra case fans lol) BUT, I now want to just switch over to Intel and be done with it. Intel board, cpu, and Nvidia GPU.

I was thinking of going with an i7 in order to help stream Plex videos to my family members while simultaneously playing a game. I'm assuming that the i7 would excel here over an i5, am I correct on this?

Based on all of this, which mobo would you recommend? I am looking to future proof it a little bit, hopefully get a little bit quieter CPU, as well as move up to such niceties as sata iii and USB 3.0.

I don't need onboard GPU but it seems as if most mobos are coming with it nowadays (for intel chips anyways). I run two monitors, one is a 23" hdmi, the other is just a little 17" or something monitor I picked up for free.

If you can afford it I would suggest going with a skyake processor

It is not an overclocking cpu but if you want one go with the 6700k.
