'Ethernet' Does Not a Valid IP Configuration.

I am running a self built gaming rig on W10 and a long time ago I set up a static IP Address to run a Minecraft Server.
This was set up on my old PC and has carried to this one, same hard drive.
The Internet has been working weirdly, I occasionally get network dropout that lasts about a minute and now it won't connect at all.

Any help would be appreciated.

Did you make any changes between "network dropout that lasts about a minute" and "won't connect at all"?

There are lots of possible reasons for network dropout.

First, undo any changes you made, if any, before full loss of connectivity.

Then, I suggest that you , temporarily, go back to allowing router DCHP IP assignment to your gaming rig.

See if the network connectivity returns in full or at least partially. Do some additional troubleshooting.

Static IP's can easily cause a conflict due to duplication if you have not reserved a range of addresses for DHCP and assigned a static IP outside of that range.

But if something else is going on then the problems can mask and confuse things. Maybe a bad cable with...
