Can I use an extra SSD to cache a secondary storage HDD?

I have an 256gb ssd running as my primary drive for the OS and Applications and a 1tb HDD for Games and other media stuff. I also have an extra 120gb SSD. So my question is, can I use this extra SSD as a cache for my 1tb HDD ala Hybrid Drive? If yes How?

No, the Hybrid drives have more than just the storage sitting there, there is also quite a bit of controller logic in the firmware to operate it.
What you can do is move the paging file over to that secondary drive, although that won't help too much due to how the solid state drives work vs a platter drive.
