It very much depends on how well optimised the game is for Crossfire/SLI and what frame rate and resolution you're aiming for.
On a side note, you also need to consider if the rest of your PC's spec will handle Crossfire effectively. As well as a good PSU, you'll also need a fast CPU and sufficient RAM, not to mention good airflow throughout the case.

i5 4690k (occ' 4.5ghz) 1866 ddr3 8gb of ram and thermaltake thoughpower 850w, playing in fhd and aiming for non dropping 60fps, so which one will handle crossfire or single gtx970 ?

For 1920x1080 resolution and 60 frames per second, I would go with the GTX 970. An R9 380 in Crossfire is overkill and you eliminate game optimisation and driver issues, as well as use less power and create less heat.
