First PC build! Gaming and video editing computer! $2100 budget. I'm open to suggestions with gpu, cpu, and motherboard. Everything else should be fine. I want this build to be more focused for video editing but I would like it to handle games at ultra settings as well on the side.

Archgaull

Admirable
Made the CPU K so you can overclock, changed the cooler to a Noctua (more simple to deal with) and gave a better brand SSD.

I plan on handling hd and uhd (4k) material through either adobe premiere, avid media composer or after effects. But I also would like to do some decent gaming at at least 1080p at 60 fps. But an editing build is more what I'm looking for. I also want to stick with skylake or a motherboard chipset that can use skylake down the road. Thanks for the feedback guys!

You need alot of RAM and a good cpu like i7 4790k and better, to accomplish better performance while playing the videos inside the editing program. I think a minimun of 24GB ram is needed for that. 16gigs are exactly on the deathline.

That's why I'm starting with skylake. I think by next year they should have more cores so down the road is upgrade that as well as additional ram. For my budget now I'll put 16 gb of ram in but again down the road I will upgrade to 24 or 32 gb of ram. Should I go with the i7 4790k or i7 6700k?

Yup thats right. Have more threads needed in case of multitask which i see possible in this case.
