My build is:
Case: Coolermaster HAF X
PSU: XFX 650W
Mobo: ASUS Maximus VII Hero
CPU: Intel 4690k i5 @ 4.7Ghz
RAM: 2x4Gb 2133 G.Skill Sniper
CPU Cooler: Noctua NH-D15
TIM: Arctic MX-2
HDD: WD 2TB black
ODD: Bluray Burner
GPU: EVGA GTX 560Ti
OS: Win 10 64 bit

I am gaming at 1080p and I watch bluray movies often. I buy often from nxic us, newegg, amazon, and frys. I don't have a particular budget in mind. I am just wondering if shelling out the extra cash for the 980 or 980Ti will really be worth it. I am currently playing Diablo 3 RoS and the Resident Evil Revelations titles. I am also going to play the Batman Arkham series. I am currently not looking into 4k gaming yet.

What would be best to choose: gtx 970 or gtx 980/ti

Would the 970 not max out games at 1080 resolution? My monitor is only 1080p and I am waiting for the prices to drop for 4k tvs. It will take a while before they are cheaper (yes, I know 8k exists).

A 970 would be plenty for 1080p and with a slight overclock will keep up will a 980. An AMD 390 would be a good option as well.

I was looking at the newegg black Friday deals for the video card and narrowed down my choices between 970 and 980. 980ti is unnecesarry for my application. It would give lots of room for growth without a doubt. However, I hate overspending on something I will not fully use.

At these price points, which is more bang for my buck: $470 for an asus 980 also with a rebate of $30. The evga 970 is priced at $290.

Bang for the buck has always gone to the 970. The performance difference between the two is pretty small compared to the price difference.
