Hi and thanks in advance for your answer

I recently updated my GA-Z97X-UD3H-BK (rev. 1.0) bios from f6 to f8, but now when activate x.m.p. profile the uncore ratio don´t drop anymore

My questions:
this issue can be a big problem on short or long time?
How can affect the performance?

that's what I did
my first boot in default settings
then set to my custom
that way i found the problem
so i set step by step to find the option that causes
 
What CPU do you have. Most Intel CPU's have to be OC'd to get memory speeds higher than 1866MHz or even 1600MHz. If you have an i7-4790 or the K version, setting optimized defaults then enabling XMP, Profile1 should set up that memory kit to the advertised speeds. Need to set "optimized defaults" first. Not default settings. Then the XMP Profile1. Make sure that memory voltage (DDR Voltage) is 1.6 volts too. Save settings and exit.

Well, thanks to all, but reading and investigating, i realize that no is a big problem.
Gigabyte, they don´t think that is necessary, so remove it
they think there is no razon in a desktop save that energy
