I have a GPON Terminal which supports Bridge connection as well as PPPoE Connection, I feel very concerned with privacy on the internet, so I wanted to take control, analyse all connections, allow or block the connections on the WLAN/LAN side to the WAN side, the problem is I don't know how to do it, it's not a problem using a dedicated pc to monitor the traffic.
I want to monitor and control the LAN, WLAN and WAN traffic, the pc have two RJ45 Ethernet Ports ( one from an Ethernet modem and one integrated on the motherboard ) so one could be the host[WAN Bridge to LAN] and the other could be the client.
Please help me and lots of people to take control of their internet connections...

You could load a firewall like pfsense on the device to start and see if it would meet your needs.

This would need to take the place of your main router to make things easier and you would have to place AP infront to provide wireless

You will probably have to insert a dedicated firewall. You would either need to purchase a ZyXel or similar or build a pfSense firewall. Consumer grade routers with firewalls don't have the horsepower to provide the capabilites you want. To separate WIFI and LAN you would have to move WIFI off the router to a dedicated AP. That way WIFI and LAN would have to go through the dedicated firewall.

It is not clear how "privacy" comes together with "I want to monitor"... And your GPON has nothing to do with that.
