Just wondering, I don't want to have to unplug the current gpu if I don't have to, but I need to get in and remove those drivers before properly updating the current card.

This sounds as simple as a graphics card upgrade, yes you can. Simply uninstall the old drivers when you've booted into windows, restart, then Install the new drivers after, restart.
