Will my graphics card be able to handle gaming on 2560 x 1080 monitor?

First off here are the over all specs, Intel 3770k 4 core, 8 threads clocked at 4.4ghz. Intel Extreme Motherboard DZ77GA, 16Gb corsair vengeance ram, and my graphics (main concern) GTX 560 4GB( yes it is a 4GB, a 560 with 4GB is extremely rare.) clocked at 851 mhz. The only concern is my graphics won't be able to handle gaming a 2560 x 1080 screen. Please leave your answer as I need to know if I'll be buying 2 21.5 monitors or a 26" 2560 x 1080 monitor. Thank you so much!

If you keep all the settings on low-medium it may be possible to do so. As already said, depends heavily on the game. But every game should at least run smooth if you tweak around the settings a bit.

And no, your 560 doesn't got 4gb VRAM, because they we're never made. Read this:

"DxDiag is reporting memory that is available to the system to be used to cache textures and data before it gets sent to the graphics card as well as physical memory on the graphics card.
DXDiag is simply telling you the size of the total video memory pool. "
