If i were to air cool my gpu, but eventually use an all in one cpu cooler like the kraken x60 or corsair h105, which case would be better?
 
Both will work for what you're trying to do. Both have good cable routing options, setup for lots of airflow, and both even use a PWM hub for your fans. The really big difference is in buying fans and which one supports a 5.25" drive bay.

The Nzxt has more case fans preinstalled, but has no 5.25" optical drive bay. The Phanteks would require you to buy more fans to meet the airflow of the Nzxt but does have a 5.25" optical drive.

How is the cable management in the h440?

 
It's pretty decent. I've only worked on one but cabling it was pretty simple once we figured out the Hub and the lighting switch panel. The back panel will allow for cabling to run behind the board and theres a ton of room for cabling in that shrouded area. A few suggestions I would make if you get the H440, get a SATA power extender like this

and possibly a 8pin PSU extension cable like this

(they make much nicer ones, these are just basic examples. You can even buy them directly from Nzxt)

The placement of the SSD on the bottom of the windowed area in the case makes plugging in SATA power connectors tricky and it puts strain on the connectors. It forces an angled connection which could potentially lead to physical stress issues on the drive.

As for the 8pin PSU extension, depending on how long your 8pin cable is it might have a hard time reaching up and over to plug in. Likely the same would go for the Phanteks case as well.
