How close can I get to using all the power my psu provides? I plan on adding another gpu later using sli and I know it'll be 4

Depends on the power supply some of them that are rated for say 600 Watts will pop around the 450 mark.
With a high quality power supply I try to figure at the most 75% under a full system stress test for gaming because then you would probably never hit the 65% mark for a workstation where your using near max TDP for a prolong period I look for the 60% range.

It's aa corsair cx500. It's bronze I know its not the best, I used pc partspicker to put together my build and it said I'd be using 375 and adding another gpu would make it 450. I don't want it to blow up. I think I should just get a better one when I upgrade.

That would be a good move, if parts picker says 450 watts I would be looking for a decent quality 650 watt PSU.
