i currently am looking into building a CHEAP gaming rig and i have a budget of $350 canadian. I will be doing some slight video editing and recording. The 2 sides are very similar; i just need to know which one is more important.

More RAM:
Cpu: AMD A8 7650K
Motherboard: Gigabyte GA-F2A68HM-HD2
Ram: G.Skill Ripjaws X Series 16Gb (2x8Gb) DDR3 2133
Storage: re-using a 1.5Tb hard drive
Case: Corsair SPEC-02
Psu: EVGA 430W 80+

SSD:
Cpu: AMD A8 7650K
Motherboard: Gigabyte GA-F2A68HM-HD2
Ram: G.Skill Ripjaws X Series 8Gb (1x8Gb) DDR3 1866
Storage: 120Gb Sandisk SSD + 1.5Tb Hard drive
Case: Corsair SPEC-02
Psu: EVGA 430W 80+

Which side would benefit me the most?

Start with the 16GB version.

It's better to get a rig with RAM that has been bought from the same pack, and at 16GB you won't need to upgrade it like you would the 8GB model. An SSD is very easy to add on your own later once you can afford one, and prices for a good 120GB or 250GB model are going down all the time.

The ssd is cheaper than the extra 8Gb of ram from the 16gb side. I was either thinking of 16gb of ram, a 120gb ssd, or amd a10 7870k

SSDs are relatively expensive and their prices are gradually going down every day. If you can see yourself needing one now then sure, go for it, but I would personally go for more memory or a better graphics card. If you're able to hold on and save up a little longer, another 100$ can go a long way.
