Network Woes - Cat5e vs 6 vs 7

Long story, but I'm looking to run a cat cable from my house to a separate shop building. I measured the total distance and am looking at a 370' run(I may be able to cut it down another 10' or so) My question is which cat cable should I be using? (I realize any Cat wire is only rated to 328', but what would be my best option)
The plan is to have my isp come into the house modem/router and then shoot off from there. The cable will be feeding a small office (couple computers, wireless decives) All my router/switches have gigabit connections but the main purpose of the cable is to get faster internet to the space. I currently have service directly to the shop building through windstream but the fastest they can give me is 10down, 1up, which does not meet my needs. The other provider in my area says the building is too far away for them to provide service directly, but they will run it to my house and I can run something from there. If I get a 50down 5up plan, would cat5e be sufficiient to sustain that speed over 370' or would I benefit from 6 or 7 at all? (less interference, potential speed)

Yeah you will need a switch inbetween or a POE(power over ethernet) connector inbetween atleast or you will have barely if at all functioning network service. I wouldnt waste your money on cables above cat5e with the internet connection you have itll save you a decent amount.

If I understand correctly, I need to have power ran halfway to power either a switch or POE to amplify the signal?
