How well with this pc run modern titles on high-ultra on 1080p?

I am building this pc for general use and to play games such as GTA V, Minecraft, Skyrim, Witcher 3, Fallout 4, etc.

I spent a well amount on the processor as in the future I plan on upgrading without worries of my CPU bottlenecking my GPU.

My main concern is Skyrim, many say it is very CPU reliant so I went with a xeon.

GTX 960 has been benchmarked at about 45fps on average for Witcher 3 on high. You might get 30fps on ultra. GTA V is similarly demanding from experience, so I'd use that as a reference for what to expect.
