Help me pick: Asus SABERTOOTH X79 VS Asus X79-DELUXE

Depends on what your needs are. Both are solid boards so it depends on what bells and whistles you want.

The Sabertooth is going to have air cooling on its chipsets (thats the thermal armor) which can be nice if you're overclocking but it also means its one more set of fans to keep clean. It has a high power design, also good for OCing. The Sabertooth series also typically has more detailed fan controls and heat sensors.

The deluxe is going to give you more immediate perks. 8 SATA 3 ports vs the Sabertooths 4. More USB 3 ports. Wifi, Better audio chipset. If you're not going to make use of the better power phasing, or the quad SLI support on the Sabertooth, these perks are going to overshadow what the "Tuff" branding gives you.

Of the choices you've given, go with the Deluxe.
However you're paying a premium for the older parts over a current X99 build.
Take a look at this, is updated to the current chipset but with your other options intact.

With either of the builds you go for, if you're going to use that case (which I love, I build up a friends computer in one) you will want as SATA power extender for the SSD. Like one of these

The placement of the SSD is almost flush with the bottom and so the power connector forces the SSD up at a slight angle when you plug it in. It puts a strain on the plastic power/data connector on the SSD that was worrisome enough when we built up that my friend oped to put the SSD in the slots with the 3.5in drives. If you stick the SSD in with the 3.5 drives obviously you wont need that connector.

Now for the motherboard selection, I have already purchased the XEON E5 2640 processor & also the x8 RAM (which is DDR3).
Both are very limiting the range of selection I have for the motherboard.

Do you recommend me to go for the Asus X79-DELUXE? I dont mind paying a little extra if theres something to improve there..
 


Well if you have to stick to the X79 series, the Deluxe will likely do you well. The cost difference the Sabertooth has of a couple hundred bucks for more thermal protection that you may never use seems like a bad idea. The Deluxe has some good bell and whistles and will do everything you've said you want to do.
