I am getting this motherboard and have a few questions regarding it. First of all, on the diagram it says it has an 8-pin CPU power connector, however I'm not sure if PSU's are designed for this (on the information about the power supply it says it has PCI-e connectors and an ATX connector, but nothing about CPU connectors.
Secondly, under the Multi GPU support section it says it supports Windows 7 and 8.1. I will not be running multiple graphics cards, so will I be able to use Windows 10 on it?

THe PCI-E connector is mainly for powering the graphic card, it is not for the cpu power.
What psu model you looking at?
There are other terms that can be used for the 8 pin cpu power connector such as 8 pin EPS or 4+4 EPS cable.
Yes you will be able to use window 10 on that motherboard.

EVGA SuperNOVA 650 G1. On the website it says it has 1 600mm EPS cable and 1 750mm one, whatever that means.
