I can play GTA 5 720p 30-40 fps with no glitching or problems. But when I start recording with either FRAPS or Dxtory, the fps is till around 30 which is great however the map starts going transparent, buildings start to literally look like Minecraft blocks and I can see cars and people through the map. Why does this happen and do I need to upgrade any PC parts?

Simply your hardware is not strong enough for playing and recording at these settings. What settings are you playing under? Try to some lower settings. Or try a different program, I wouldn't use FRAPS. If you installed Nvidia Experience, then look for Shadow Play feature, which will record the screen with almost no loss of performance. But I don't know if you card is supported.
