New install on SSD with AHCI plus 2 HDD in IDE

I have a brand new SSD on which I want to install Windows Seven.
I today have 2 HDD with Windows Seven installed on them (I had two OS because one of them was giving me some problem in the past; I will do some cleaning once I am sure that the new install is stable). I got a bit of data on each of them so I do not want to erase them now, even if I already saved everything that was worthy on an external HD.

So after some research on this site, I got it clear that I need to:
disconnect other drives
switch into AHCI in the BIOS before doing the install on the SSD
do the install from a DVD (hoping it will be recognized once in AHCI)
then reconnect my other HDDs

I found bits of answers already, but as I don't want to mess things up, could you tell me if I will still be able to access the two HDD once in AHCI? Can I still boot on them or will I get a BSOD and have to install AHCI drivers to prevent that?
If not can I do something else than just formatting them? I didn't get it clear if the issues I can get are linked to the drivers (so only if using the OS on the HDD) or to access to the data on the HDD as well.

Yes you will still have access to the drives but if they were bootable in IDE mode you will need to change the bios back for them to be able to boot.
Once booted you can change the driver the OS uses to boot with.
- Boot HDD1 in ide mode & Change registry entries.
- Boot HDD2 in ide mode & Change the registry entries.
- Boot into Bios and change back to AHCI mode
Now all your drives should be bootable in AHCI mode.
