Difference between Gigabyte Z170X Gaming 7 and GIgabyte Z170X-UD5 motherboards?

They are pretty much the same in most aspects. only difference i can spot is the Ultra durable uses an 8+3 (11 total) power phase VRM (VCC + VCCGT) and the gaming 7 uses a 12 power phase delivery system.
For extreme overclocking, the extra power phase may make a slight difference but for the average user that is overclocking you won't be able to really tell the difference

Hmm I see. Thank you. I am going for a Skylake building slowly acquiring the components as I see deals. At the moment, I have a Patriot Viper 3000mhz 16 GB, Evo 850, and 960 GTX. Any compatibility issues, concerns, or recommendations?

Well i personally have the Gigabyte Z97x UD5H-BK and I love the board (not the same I know, but close enough)

&& I don't see any discrepancies, you're good :)
