If you build a new system, I'd also suggest getting the 5820k. Pretty much the same performance but a newer technology and also DDR4 RAM.
DDR4 RAM might cost a lot more but therefore the 5820k is a lot cheaper than the 4930k for whatever reason. In the end the 5820k will do better than the 4930k.
The 6700k is kind of behind both, if this is just for rendering and work stuff.
I see you're a graphics card expert. Any suggestions for this type of work? I've heard some people say workstation graphics cards are a better option and others say there is no real difference. I'm looking in the neighborhood of $250.

I don't know how big the difference between "normal" GPUs and these $5000+ Nvidia Quadros and stuff is.
But i think the best card in your budget range for pure performance is the R9 380 4gb version. As far as i understand more VRAM = better for rendering and graphical work stuff but better ask someone else too.
If you could extend your budget a bit, there is a 8gb version of the R9 390. But as i already said i honestly don't know how much of a difference that makes in rendering and stuff.
