Help deciding parts for first gaming PC Intel I5 4590 + GA-H81M-H + GTX 560 ti

I want to build my first gaming PC but I'm really struggling to decide what components to buy. I have a significant budget restriction due to the actual high prices of import products in my country. This is what I have in mind:

CPU: Intel Core I5 4590 (used)
MOBO: Gigabyte H81m-h (used)
RAM: 2x4gb (used)
PSU: EVGA 500w
GPU: GTX 560ti (used)
CASE and HDD: Old ones that I have in my home

My biggest struggle is deciding wether a GTX 560ti is enough. I would want to play games like GTA V, FIFA 16, the latest CODs, Witcher 3 etc. In 1080 middle to high settings and getting around 30 fps or ideally the same fps that I can get with a console.

I could also buy an used GTX 680 instead (for double the price of the 560 ti), but that would mean that I won't be able to build the PC at least this year, because I won't have enough money to do it. Should I buy the 680 now and wait maybe a couple of months to build the whole PC or do you think the 560 ti will be enough for now?
