Two ssd-s in raid 0 or one with morecapacity

So I will upgrade from a hdd to a ssd soon, and i can get two samsung 850 EVO 250GB disks for 152e or one 850 EVO 500GB for 154e. Are there any other cons except loosing all your data if one of the disks dies for raid 0? Which option should i go with?
On a side note, what is a good programme for copying a windows installation from an hdd to an ssd?
This will be my config:
1/2x boot ssd 500gb
1x Seagate barracuda 1tb for media
1x WD greeen 1tb for backup

No. You would see zero difference.
By 'large file', I meant a couple GB 3D rendering, or a single sequential chunk of data.
A game level is made up of many, many, many small files.

Sorry for bring back this topic on top but I have a similar question.

My old macbook pro mid 2010 has 2 sata2 connector, one for superdrive and one for the internal hdd.
I wonder which is the best solution:

1) 2x250gb ssd (removing the hdd and superdrive) in raid0 (just to bring them to about 500mb/s, I know of the possibility of data loosing);
2) 1x500gb ssd + my 320gb hdd (removing the superdrive) but at the cost of reduce the power of a sata3 ssd.

What do you think about it? (not complaining too much on the storage size but on the quality of the setup since I don't plan to buy a new mac in the next year)

Option 2. The actual user difference between SATA 2 and SATA 3 is not really that much, for most functions.
Yes, you can tell, but not enough to overcome the drawbacks of RAID 0. (IMHO)
