Random hanging & blackscreening during gameplay after upgrading to R9 380 (850W psu)

I come to you with a challenge today. I've recently upgraded my graphics card from a PNY GTX 650Ti Boost to a Gigabyte Gaming G1 R9 380, but shortly after the upgrade, the system started to freeze and then blackscreen during gameplay.
As clarified on the title, I'm positive the psu is not the issue since it's overkill.
Each time seemed to be triggered by an action taken in-game (potentially any action. Scoping in, quicksaving, firing, moving), but I haven't been able to figure out a pattern.

Attempting to fix this, so far I've tried:
- Pre-Crimson Edition drivers (Catalyst Control Center)
- Beta Crimson Edition drivers
- "Re-doing" the cpu overclock from scratch
- Downclocking the system ram
- Running with no overclock on the cpu

(and here's when it gets interesting) Tested the card on another comp and got the exact same issue, so I thought I had to be a defective unit. Thus I went to the store and got a replacement gpu... which also appears to have the same problem.
This leads me to believe either I have astronomically bad luck and somehow got two bad cards in a row, or there's something off in both comps I've been testing this, but it only affects the R9 380.

So I'm clueless as to how to fix this here. Any ideas, theories, help, all is welcome.

System specs:
Windows 10 Pro x64
Gigabyte 970A-UD3P
AMD FX-6300 @ 4.5Ghz
CM Hyper 212+ (and two 80mm fans pushing air into the VRM, plus a 120mm fan on top of the case)
1x8GB Patriot Signature PSD38G16002H DDR3-1600 @ 1333
Gigabyte Gaming G1 Radeon R9 380
Corsair AX850

Notes/P.S.:
- The freeze+blackscreen did NOT occur with the previous gpu (the 650Ti Boost)
- Each time gpu drivers were uninstalled, I did so with Display Driver Uninstaller, from safe mode.
- ANY additional information (DxDiag, how something is configured in my system, anything) feel free to request, I will gladly add.

That's actually a very interesting theory, it even applies to both of my test systems. But how do I make abso-frikin'-lutely SURE I've gotten rid of the no longer needed Nvidia drivers? Since apparently Display Driver Uninstaller isn't quite getting it done :S

Solution-relevant bit: As sort of implied on the OP, I originally had used DDU from safe mode to remove the nvidia drivers to then install the R9 380. However, with this particular case, I had to be more thorough than that (see link below).
