Is it possible to configure my storage devices in this way?

I have a Samsung 850 Pro 512GB, a Samsung 850 evo 250GB and 2x 2TB seagate barracudas. I have windows 10 loaded onto my Samsung pro but I need all the space on this SSD. My HDDs are for mass storage. Can I configure both my Samsung pro and my Samsung evo as the C: drive, load Ubuntu onto my Evo and use a drive caddy to switch between the two. So effectively I'll have two C: drives, a windows one and a Linux one but only one will be connected to my machine at any one time. Will this work?
 
I see no real problems with it.
SSD as main drive on drive caddy, seagates as data disks
and when you feel like it, shutdown, take out caddy, insert caddy with ubuntu SSD on it, start it.
so ubuntu sees:
SSD as main drive on drive carry, seagates as data disks

since disks are separate and never connected at same time, I doubt either OS would have any real idea that the second one even exists.
 

Why not just dual boot? (Ubuntu on the second SSD, Windows & bootloader on the first)

Two reasons. Firstly I need all the space on my windows ssd and secondly I intend on using my Ubuntu ssd to visit some sketchy parts of the internet and I don't want my windows anywhere near it when I do because that is what I use to do all my CAD work, banking etc...
