Installing SSD while still having HDD

So I just got and SSD, now im wondering how to proceed. Do I only unplug my hdd and install the new os on the ssd and then plug back in the hdd? Right now I have two partitions on my hdd, how to merge them? And when? Do I need to delete the old windows? Do I need to manually select which drive to be "System" ?

First of all, I'd start by doing a backup of your current system and data somewhere else (like on an external HDD). @Mattios is right, you'd definitely need to unplug the HDD and install Windows on the SSD, otherwise, you'd encounter an OS confusion which could results in a lot of booting issues with your system later on.
Once you have Windows up and running on your SSD, you can simply plug back your HDD and reformat it through Disk Management in order to delete the old system's partitions and start fresh with it. Then you can simply transfer back all your files from the backup drive.

Unplug old drive, install windows to SSD, boot from SSD, fully update/setup Windows, turn off PC, plug in HDD, delete Windows files from old HDD, use old HDD for storage.

Make sure to set your BIOS boot priority order to boot from the SSD first.
