Good parts mate...only suggestions I'd make are:

1. Different 980ti (http://hothardware.com/reviews/geforce-gtx-980-ti-round-up-msi-asus-and-evga)...you can find some great options for around 670.00. I personally use the EVGA ACX SC 980ti...very quiet and runs cool. I have +125Mhz on the core/boost and 250Mhz on memory with peak temps in the 50s.

2. With such a powerful machine, I'd really encourage you to look at some 1440p displays...you can find many (non-GSync) varients for around 300.00.

1. I know an air-cooled 980 ti would be less expensive. However, I want it to be (at least partially) water cooled so I can overclock as much as I can at the lowest temperature

Also, what is your opinion on the PSU. Too much/little?

This is what I got for two 980 ti's in SLI.

Load Wattage: 739 W
Recommended UPS rating: 1400 VA
Recommended PSU Wattage: 789 W

I used a a stout overclock, a bunch of fans and USB devices an it came back with a recommended 850 watt PSU. Having more than you need never hurts. In fact, you want to leave a 100 watts or so headroom so that your PSU isn't running at full capacity to keep heat and fan noise down.
