Need help in Removing OS from Hard drive

So here's the situation. I'm making a new PC and would like to us the 1tb hard disk from my old build in my new one. Normally, I would reformat in the process of installing my brand new OS on it, however here's the catch. I bought an SSD for my new build and would like to install the OS on that. My question is, how do I remove Everything on the Hard disk including the OS so that it is completely empty when i put it in my new PC, and doesn't confuse the computer as to which OS to boot to.

At what point in the installation of new OS on my SSD do I unplug the data cable for the HDD?

 

When you fully install OS.

Unplug the HDD? Before you boot to the installation disk. The idea is to not have a 2nd drive in the PC so there will be no confusion to Win where to install the OS's boot sector to. Once the OS is installed and you are back at the desktop, shut down, plug in the HDD, and boot back to Win. While in Win, you can re-format the HDD.
