Ok let's say i can grab the r9 380 and change it again after 2,5 years will it be a better deal than getting a r9 390x for 5 years ?

I don't think I will ever NOT go high-end on the base platform (CPU, RAM, motherboard), but I have swapped out the graphics card three times since. I think you'll end up swapping out any high-end card within a couple years if you plan on playing recent titles at decent framereates and higher quality. One thing to do is look up what high-end cards looked like 5 years ago from today and see how well they'd play your current games if benchmarks are available.

after a little research, the hd 7970 is basically the r9 390x 3 years ago. the hd 7970 is 280x re branded, and it considered a mid-range now, and probably will last for another 2 years, the GTX 480 was same priced as the r9 390x 5 years ago and it is still capable of playing the witcher 3 on medium settings.

GPUs from the past 3-4 years "aged gracefully" because AMD and Nvidia were stuck on 28nm. With 14-16nm GPUs hitting the market possibly within the next six months, there should be a major increase in performance-per-buck next year that should make everything available today look old.
