If they are good quality 500W PSUs (not cheap, junk fake 500W units), one of them will be fine for the GTX 960. But like you say, some 960s will require a single 6 pin, some an 8 pin. It will depend on which card you get.
But any 500W PSU that is NOT junk, will have those cables. If yours don't, it isn't a real 500W unit. Or a very, very old unit.

The case will work. But you'll need a new PSU.

Do you recommend anything? I got a couple 500w PSU's but I dont know if they have the right cables.

You don't always have to cut the case. If you get a card that doesn't have any ports on the 2nd half of the bracket you can cut the bracket in half, then trim the plastic cover so air goes out the side of the card at the rear. Also expect to grind a few fins at the end of the card where the cooler mounts to the MB. I have a Sapphire R9-285 ITX I did this to. Or you can take a nibbler and make the 2nd slot in the case, you still need to trim the extra tabs at the top and bottom of the bracket.. Nothing is pre-made for a BTX computer so this is expected. The term butchering reflects more on the skill of the person doing it than the job itself. A nibbler pulls the chips to the outside of the case. A Dremel would make a huge mess of it. ITX cards typically require a single 8pin connector that runs off of 2- 6 pins it replaces, adapter usually included. A high powered card like this will send hot air forward past the cooler where the fan can't remove it. An expansion slot cyclone blower will clear the hot air out from behind the GPU.
