Gonna post it on Ebay. What type of pics should i include to show that it works properly?

2. Should i document anything on my end, so the buyer cant screw me over (if possible)

3. Will putting a new cpu in my rig mess up my current install of Windows 10?

Solution
I have sold many CPU's on eBay and still do to this day. Take a screenshot of CPUZ if possible. Do not use random pictures from the internet. Take a picture of the top and the bottom for the listing. Take 5+ pictures from different angles for your personal records. Keep documentation of the serial number, every CPU has one and they are unique to that chip. eBay has a "buyers guarantee" but I recommend that with CPU's do not offer a return policy. Clearly state in the listing that all sales are final. Been selling on eBay since 2002.

As far as the new CPU goes its plug and play. It might prompt you to go into the BIOS the first time you boot but that's it. The Windows 10 OS is not effected whatsoever.

1) Post a pic of CPU-Z showing the chip functioning
2) Nothing more you can do other than use PayPal
3) No.
