Switched mobo to more price efficient.
Switched PSU to one that can handle gaming rigs. (extremely good psu from Antec)
Switched GPU to the better much better GTX 980 TI 6 GB (if you´re in this budget range, you might as well get the best)
Switched SSD to 250 GB and added 1 TB HDD. 2 storage drives are preferable and you mainly need SSD for Windows and your most used programs/games.

I don't need the hard drive as I already have a 2TB one at home, so the money saved on that I'm happy to buy a bigger SSD. The 980ti goes a little out of my budget, as well as the 980, but with the cheaper motherboard i might be able to include it instead. The shop I'm ordering all my parts from doesn't sell that power supply, but I can upgrade to a 700 in the corsair. Other than the cost what would be the benefit of the motherboard?

I strongly recommend 980 TI if it fits your budget.
If you´re looking at a Corsair PSU - look for HX or AX series, the VS and CX series are not meant for gaming, overclocking or any station that will run above office load. The capacitors are only recommended at 30c - which is quite low.
Corsair AX760 is an excellent PSU (I have 2 and I absolutely love them)

You may want to look into m.2. SSD drives instead of the standard SSD drives. They are lighting fast, and the mobo I picked (and almost any z170 mobo) supports m.2. ssd.

The top of the line is the 950 Pro from Samsung.

I've also read that unless you're gaming at 4k the 980 is sometimes overkill. I will only be doing 1080p with high settings (I'm happy to let ultra settings being a future dream at the moment.)

You´re right, its absolutely overkill at 1080, at which point 970 is the king.
